Last year was the first time I ever cooked a turkey on the smoker for Thanksgiving. In fact, last Thanksgiving was the first time I ever cooked a turkey, period! Some people like flying by the seat of their pants, but it really would have sucked had the turkey been ruined. Fast forward to the Thanksgiving season of 2013… and with a turkey in the freezer (in the 10-14 lb range, closer to 14), there was no excuse for not doing a test cook beforehand!
As most of you know, I am a KCBS certified judge (and almost 2/3 of the way to my Master CBJ certification). KCBS events are fairly easy to find here in the Mid-Atlantic region. However, Memphis Barbecue Network (or MBN) contests are a little bit harder to locate here. So when I saw that the Q-City Charlotte BBQ Championship (formerly known as the Time Warner Cable BBQ & Blues Festival and as the Blues, Brews, & BBQ Festival) was looking for both KCBS and MBN judges, I decided to apply. And lo and behold, I got picked!
Some of my favorite people ever are the crew from the Ubon’s BBQ team. At Memphis in May each year, they have a tradition of serving “The Perfect Sandwich”. For those of you who are not familiar with this sandwich, it is a smoked prime rib sandwich served on a sandwich roll with mayo and horseradish. And if you ask real nicely, Leslie may even dip the inside of the sandwich roll in the au jus for you. Who needs a reason to have a party when an opportunity will suffice! While I have been blessed with many talents, one of them, unfortunately, is not a knack for working on machinery. In particular, lawn mowers and things with small engines give me fits. So when I found out that my father-in-law was going to be coming over to help out with the lawn mower and tiller, I knew then and there that I had to give him and my mother-in-law a proper payment: all the ribs that they could stand to eat!
